Creating a Plush doll -- what fabric should I use?

My friend and I tossed around a silly idea and I think we may go through with this. We wanted to cosplay (dress up as a character) and attend an Expo next summer. We have the ideas in play and I found a cute plush that looks easy and suits the cosplay perfectly.

I planned on sewing it together, which is a new thing to me, but I wanted to know what fabrics would be recommended for a plush doll that is going to be sewed together. I kind of wanted to avoid felt fabric because I have sensitive skin and it feels really rough to me.
